White Wines :

Traditionally in Austria, and with it in the Burgenland more white than red wines are grown. The Grüner Veltliner variety alone accounts for about half of the Austrian vineyards area. While being the most widespread variety in Niederösterreich, this applies to the Welschriesling variety in Burgenland, followed by the most important red wine variety the Zweigelt.

Due to the warm and dry climate around Lake Neusiedl we most often start harvesting white wines around the middle to the end of September. The exact date has to be heeded anew every year for gaining fruity and vivid Qualitäts and Kabinett wines because the grapes would become too ripe and sweet otherwise. On the other hand this provides us the possibility to deliberately wait and harvest the full-bodied overripe grapes we use to earn the high-grade noble dessert wines, called Prädikatsweine in Austria.

After the harvest, which is done by hand for all our wines, the grapes are de-stemmed and the must (juice) is pressed out gently. With some, intense-flavoured, varieties the grapes are crushed and then let resting under cooled conditions for a couple hours. Thereby must runs out of the grapes and dissolves valuable aroma components out of the flesh. Wine made out of must treated by this procedure appeals with especially pronounced fruityness. After pressing the must is fermented slowly and gently at a variety-depending temperature between 13 and 17° Celsius. This cool temperature minimizes aroma losses which otherwise would occur due to a untamed fermentation

Following the seven to ten days lasting fermentation, the young wine ages in our cellar until bottling. But it is not called "wine" till the "wine baptism" which happens on November 11th. Before that we call it "Sturm" (storm) just like we do during the fermentation.
