In the late october days, when the grapes are already overripe and affected by noble rot (Botrytis cinerea) we begin to harvest our Prädikatsweine (high grade quality wines of especially high predicate, made out of overripe and often noble rot affected grapes). The sugar content of the grapes is measured regularily for prediction of the best harvest date. In Austria dessert wine quality levels are determined by the sugar content of the grapes and the intensity of noble rot affection. The levels are in order of increasing ripeness: Auslese, Beerenauslese (BA), Ausbruch and Trockenbeerenauslese (TBA).

Due to the special ripening and harvesting methods and the natural juice concentration that takes place in the process of Prädikatswein production the yields are much lower when compared to Quality or Late Havest category wines. That leads to the fact that Prädikatsweine are always the rarest and most precious wines of a winegrowers family.
