The Cabernet Sauvignon is a french red wine variety which is considered to be
one of the worlds best. Cabernet vines are grown everywhere where they get
enough sun and warmth. Because its high tannin content and the high acidity
the Cabernet Sauvignon is often used vor cuvées. All the famous red
wines of the Bordeaux region for example, are cuvées made of Cabernet
Sauvignon and the very mild Merlot among others. The Cabernet vines love
warm soils and plenty of sun. The grapes ripen late, so the harvest cannot
start before the end of October.

The young Cabernet Sauvignon shows a garnet-red colour which later changes to
dark red.

Offering a beautiful cassis aroma Cabernet Sauvignons need time to age before
they are ready for drinking. Too young they are rich of tannins and tart,
but after some years of ageing they become smooth and harmonious and show
their real character.
